Wow, is it the end of day 4 already?
Breakfast was a peach (used a whole peach), kale, and orange juice smoothie. Whole 30 discourages smoothies but I did it anyway. Because I'm a rebel. Busy @ work, had a dollop of coconut milk in my coffee, didn't really get hungry until lunchtime.
I had leftovers of the cilantro lime cauliflower rice with mango salsa from last night. Still good! Also had another salad in a jar. I'm a big fan of those! Still as fresh as when I made them on Monday. Snacked on a little trail mix later, but really didn't need much.
Supper was tuna salad made with a can of tuna, an avocado, lemon juice, salt and pepper. I've made this before and it's good stuff. Frank had his on bread, mine was wrapped up in lettuce. Also some green and red peppers and onions sauteed in coconut oil. Some fresh watermelon and pineapple.
I made some two ingredient pumpkin muffins to take along with some fresh fruit to a new mama from church. No spoons or bowls were licked in the making of those. Frank had to be my taste tester. I am just enjoying the homey, spicy aroma in the house. Bonus: I got to hold the new little week-old baby. What a cutie!

Day 3
It got a little easier today! Not so hungry and I slept like a rock (back to my usual, lol) last night.
Breakfast this morning: Seasoned half a fresh tomato with salt and garlic powder and put it in a skillet with olive oil. After it cooked awhile I added an egg to fry. Pretty good!
Lunch was salad in a jar - day 3 since I made these and still fresh as the day I made them. A half avocado. An apple. I ate at my desk, so I had bites here and there in between working. Also snacked on a little trail mix, kale chips, and an apple. After work was book club and I took fresh pineapple and peaches and had some grapes there. The conversation was good so I didn't miss not trying the cookies... much. This month the book was Plain Song by Kent Haruf. Next time we are doing Eventide, the followup book to this one.
Dinner was fabulous! I made some cauliflower rice because, you know, everyone is doing it these days. Used this recipe:Cilantro lime cauliflower rice and the mango salsa. Kara and Nels came over and we had some of the rotisserie chicken from the other day with it. Very delicious and filling. Kara made some homemade dressings for salads over the next few days. We may give up store-bought salad dressings altogether - these are so much more healthy/inexpensive/tasty/creative.
I think I'll have a cut up kiwi with some sunflower nut butter and call it a night pretty soon.

Day 2
On the Whole 30, it's not unusual to feel tired and sluggish on day 2 or 3. However, how would I know because I couldn't get to sleep last night. I think because I was hungry! None of my usual big spoonful of ice cream or peanut butter that I would normally have when feeling hungry @ bedtime.
Anyway, breakfast today was a fried egg, 1/2 avocado, juice, and a few a the cute teeny tiny grapes I got from my co-op.
Lunch was salad in a pint jar, trail mix, kale chips.
Dinner was a soup made with a spicy tomato sauce, cabbage, potatoes, ground beef. It was good! And a kiwi with some sunflower nut butter before heading to bed.

Whole 30 - Day 1
Trying the whole 30 challenge. No sugar, no dairy, no grains. There are a few (okay many) other no's, but those are the main ones. This morning breakfast was an omelet made from eggs, some chopped leftover seasoned chicken breast, chopped peppers, onions, and celery. Orange juice. Jasmine green tea.
Then Kara and I set out to go shopping for foods on the yes list. Not an easy task! We went to Green Acres at Briarcliff in Kansas City, read a lot of labels and ended up putting a lot of things back on the shelf. They sneak sugar and grains into most everything! Did pick up a few items. Headed back to St. Joe to Aldi, but they were closed for Labor Day, so we went to Sam's Club and picked up a few more things.
I had some mixed nuts to snack on and a black coffee after dropping Kara off, then to Wal-Mart to pick up a few more things. I made up some salads-in-a-jar, four for me, two for Kara for lunches this week using this salad in a jar tutorial. I made some kale chips. Dinner tonight was just snacking on a little of the rotisserie chicken from Sam's, some of the salad stuff, a few grapes and blueberries, and an apple with some of the sunflower seed butter I bought today.
Not a bad first day. I did feel like I spent a great deal of time buying, preparing, and thinking about food. Tomorrow is back to work!
